I’ll be honest, I cringed my nose at this recipe, but once my mom and I tried it…I fell in love!!! It’s honestly like a taco version of chili, and it’s delicious! So, here’s my Grandmother’s version and recipe of taco soup. Let me know in the comments if you’re going to try it or have made it, and your thoughts!
1-2 pounds of lean ground beef or ground turkey
1 medium to large onion (chopped)
1 can of corn (undrained)
1 can of black beans (undrained)
1 can of light red kidney beans (undrained)
2 cans of chopped tomatoes with chilies
1 can of tomato sauce (15 oz.)
1 envelope of taco seasoning for each pound of burger
1 8 oz. package of shredded mild cheddar cheese Directions:
Brown your burger and chopped onion in a skillet.
Drain your mixture of burger and onion, well.
Add taco seasoning to the meat in your skillet and stir it all up.
Add the rest of your ingredients to a crockpot, along with the seasoned burger.
Simmer on high for 2-3 hours or on low for 4-6 hours.
Once it’s all done, serve it in a bowl, sprinkle some cheese on top, add Tostitos or Doritos to the side and ENJOY!!
